Pistachio Lamb Burgers
This recipe for Pistachio Lamb Burgers is a delightful twist on the traditional burger. The addition of pistachios and ricotta to the lamb patties adds a rich, nutty flavor that pairs perfectly with the herbed goat cheese topping.
Ingredients
- 1/2 cup pistachios
- 1 tbsp ricotta
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp water
- pinch salt
- 1 lb ground lamb
- 1 tbsp chopped mint
- 1 tbsp chopped parsley
- 1 tbsp chopped basil
- 1 very small garlic clove (1/2 would be fine)
- 1 tbsp mayo
- Red onion slices, mustard, herbed goat cheese, and tomato for serving
Directions
- Puree the pistachios, ricotta, olive oil, lemon juice, water, and a pinch of salt.
- Mix the puree with the ground lamb and season the patties with a little salt and pepper. Cook the patties to your desired level of doneness.
- Grind the mint, parsley, basil, and garlic to a paste in a mortar and pestle. Add the mayo and mix well.
