This recipe for Pistachio Lamb Burgers is a delightful twist on the traditional burger. The addition of pistachios and ricotta to the lamb patties adds a rich, nutty flavor that pairs perfectly with the herbed goat cheese topping.

Ingredients

  • 1/2 cup pistachios
  • 1 tbsp ricotta
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp water
  • pinch salt
  • 1 lb ground lamb
  • 1 tbsp chopped mint
  • 1 tbsp chopped parsley
  • 1 tbsp chopped basil
  • 1 very small garlic clove (1/2 would be fine)
  • 1 tbsp mayo
  • Red onion slices, mustard, herbed goat cheese, and tomato for serving

Directions

  • Puree the pistachios, ricotta, olive oil, lemon juice, water, and a pinch of salt.
  • Mix the puree with the ground lamb and season the patties with a little salt and pepper. Cook the patties to your desired level of doneness.
  • Grind the mint, parsley, basil, and garlic to a paste in a mortar and pestle. Add the mayo and mix well.
  • Serve the burgers with slices of red onion, mustard, a dollop of herbed goat cheese, and tomato.
