Mama Bella Carrots
Carrots are good for your eyesight, and they have been associated with promoting eye health. Carrots are rich in beta-carotene, a type of carotenoid that gives carrots their vibrant orange color. When you consume carrots, your body converts beta-carotene into vitamin A, which plays a crucial role in maintaining good vision.
Ingredients
- 2 lbs carrots
- 1 yellow onion
- 1 bay leaf
- 1 green bell pepper
- ketchup or tomato paste
- salt
- pepper
- a little water
Directions
- Peel carrots and shred in food processor.
- Dice yellow onion and fry in sauté pan with vegetable and olive oil.
- Add shredded carrots, bay leaf and a little water, cover and cook on high until steaming.
- Peel and seed green bell-pepper and cube in large cubes add to carrots.
- Stir and add salt, pepper to taste.
- Turn down heat, cover and cook for 20 minutes.
- Add ketchup or tomato paste, stir and cover for 5 min, turn off heat and leave covered until ready to serve.
