Healthy Duck Soup (Ped Toon)

This recipe is a delightful twist on traditional duck soup, inspired by the culinary expertise of Mary Berry. Featured on BBC2’s Love to Cook in 2021, this soup is not only comforting but also packed with health benefits.
Ingredients
- 4 duck legs
- 1 tbsp olive oil
- 2 onions, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 1 tsp thyme
- 1 tsp rosemary
- 8 cups chicken broth
- Salt and pepper to taste
Directions
- Preheat the oven to 180°C (160°C fan) mark 4. Place the duck legs in a roasting tin, drizzle with olive oil and season with salt and pepper. Roast for 1 hour until the skin is crispy and the meat is tender.
- Meanwhile, in a large pot, sauté the onions, carrots, celery, and garlic until softened.
- Add the thyme and rosemary to the pot and stir well.
- Once the duck is cooked, remove from the oven and let it cool. Once cooled, shred the meat off the bones.
- Add the shredded duck meat and chicken broth to the pot. Simmer for 30 minutes.
- Season with salt and pepper to taste. Serve hot.
- You can add noodles or rice to this soup for a more filling meal. Also, feel free to add any vegetables of your choice.
