German Potato Salad

Ingo’s Dad’s German Potato Salad, often accompanying bratwurst.

German Potato Salad

  • Servings: 2 cups

This salad is good warm or cold.


  • 4 lbs small potatoes
  • salt to taste
  • 6 oz bacon, chopped and fried
  • 1/2 cup white wine vinegar
  • 1/4 cup sugar
  • 1/2 cup boiling water with 1 bouillon cube added
  • 1/2 tsp black pepper
  • 1 tsp dried mustard or 1 tsp. good deli mustard


  • Boil potatoes with 1 tsp. salt until easily pierced with a fork. Drain, peel, and cut into 1/2 inch slices.
  • Combine vinegar, sugar, water, salt, black pepper and mustard and pour over the still warm potatoes.
  • Add the chopped fried bacon and toss lightly.
