Ingo’s Dad’s German Potato Salad, often accompanying bratwurst.
German Potato Salad
This salad is good warm or cold.
Ingredients
- 4 lbs small potatoes
- salt to taste
- 6 oz bacon, chopped and fried
- 1/2 cup white wine vinegar
- 1/4 cup sugar
- 1/2 cup boiling water with 1 bouillon cube added
- 1/2 tsp black pepper
- 1 tsp dried mustard or 1 tsp. good deli mustard
Directions
- Boil potatoes with 1 tsp. salt until easily pierced with a fork. Drain, peel, and cut into 1/2 inch slices.
- Combine vinegar, sugar, water, salt, black pepper and mustard and pour over the still warm potatoes.
- Add the chopped fried bacon and toss lightly.
