Char Siu is akin to “barbecued pork.” A great filling.

Ingredients
- 2 14 lbs lean pork butt
- 1 1/2 tbsp. dark soy sauce
- 1 1/2 tbsp. light soy sauce
- 1 1/2 tbsp. honey
- 1/4 tsp. salt
- 1 1/2 tbsp. oyster sauce
- 2 tbsp. Jack Daniels
- 3 1/2 tbsp. hoisin sauce
- 1/8 tsp. white pepper
- 1/8 tsp five-spice powder
Directions
Cut pork into strips 1 inch thick and 7 inches long. Pierce meat repeatedly with a small knife.
Mix all remaining ingredients in a bowl. Place pork in a roasting pan, lined with foil. Pour over marinade ingredients and refrigerate, 4 hours to overnight.
Preat oven to 500 degrees. Place pan in the oven and roast 30-50 minutes until cooked, basting and turning the meat several times. Add water if the sauce dries out.
Remove from oven and cool before using.
