Ingo’s Dad’s German Potato Salad. This would often accompany Bratwurst.

2 cups
Ingredients
- 4 lbs. small potatoes
- salt to taste
- 6 oz. bacon, chopped and fried
- 1/2 c white wine vinegar
- 1/4 c sugar
- 1/2 c boiling water with 1 bouillon cube added
- 1/2 tsp. black pepper
- 1 tsp. dried mustard or 1 tsp. good deli mustard
Directions
Boil potatoes with 1 tsp. salt until easily pierced with a fork. Drain, peel, and cut into 1/2 inch slices.
Combine vinegar, sugar, water, salt, black pepper and mustard and pour over the still warm potatoes. Add the chopped fried bacon and toss lightly.
This salad is good warm or cold.
Variation
Add two hard boiled eggs and two dill pickles, coarsely chopped.
