This recipe for Smoked Turkey Soup is a family favorite, passed down through generations. It’s a great way to use leftover turkey, and the smoky flavor adds a unique twist to the traditional turkey soup.

Ingredients

  • 1 turkey, meat off bone. Cube Skin + Bones in pot
  • 6 qt water
  • 1/2 cup liquid smoke
  • 1 cup chicken base
  • 8 cups chopped onion
  • 4 cups chopped carrots
  • 4 cups chopped celery
  • 4 cups flour
  • 4 cups wild rice
  • 4 cups sweet bell peppers
  • 2 tbsp white pepper
  • 4 cups cream
  • 8 cups milk

Directions

  • Put the turkey skin and bones in a pot with 6 quarts of water, liquid smoke, and chicken base. Cook for 4 hours.
  • Add the chopped onion, carrots, celery, and flour to the pot. Cook for 15 minutes.
  • Add the stock to the pot and bring to a boil. Boil for 15-20 minutes.
  • Blend the soup to your desired consistency.
  • Add the wild rice, turkey meat, sweet bell peppers, and white pepper to the pot.
  • Stir in the cream and milk. Let the soup warm for 20 minutes before serving.

  • This soup is very versatile. Feel free to add other vegetables or spices to suit your taste. The soup will keep in the refrigerator for up to a week, or you can freeze it for up to three months.
