Roast Pork (Char Siu)

Char Siu is akin to “barbecued pork.” A great filling.

Roast Pork (Char Siu)

Char Siu is often recognized by its vibrant red color. The reddish hue is achieved by adding red food coloring or using red fermented bean curd in the marinade. Some versions of Char Siu may omit the food coloring for a more natural appearance.

Ingredients

  • 2 14 lbs lean pork butt
  • 1 1/2 tbsp dark soy sauce
  • 1 1/2 tbsp light soy sauce
  • 1 1/2 tbsp honey
  • 1/4 tsp salt
  • 1 1/2 tbsp oyster sauce
  • 2 tbsp Jack Daniels
  • 3 1/2 tbsp hoisin sauce
  • 1/8 tsp white pepper
  • 1/8 tsp five-spice powder

Directions

  • Cut pork into strips 1 inch thick and 7 inches long. Pierce meat repeatedly with a small knife.
  • Mix all remaining ingredients in a bowl. Place pork in a roasting pan, lined with foil. Pour over marinade ingredients and refrigerate, 4 hours to overnight.
  • Preheat oven to 500 degrees. Place pan in the oven and roast 30-50 minutes until cooked, basting and turning the meat several times. Add water if the sauce dries out.
  • Remove from oven and cool before using.
