Mama Bella Carrots

Carrots are good for your eyesight, and they have been associated with promoting eye health. Carrots are rich in beta-carotene, a type of carotenoid that gives carrots their vibrant orange color. When you consume carrots, your body converts beta-carotene into vitamin A, which plays a crucial role in maintaining good vision.

Ingredients

  • 2 lbs carrots
  • 1 yellow onion
  • 1 bay leaf
  • 1 green bell pepper
  • ketchup or tomato paste
  • salt
  • pepper
  • a little water

Directions

  • Peel carrots and shred in food processor.
  • Dice yellow onion and fry in sauté pan with vegetable and olive oil.
  • Add shredded carrots, bay leaf and a little water, cover and cook on high until steaming.
  • Peel and seed green bell-pepper and cube in large cubes add to carrots.
  • Stir and add salt, pepper to taste.
  • Turn down heat, cover and cook for 20 minutes.
  • Add ketchup or tomato paste, stir and cover for 5 min, turn off heat and leave covered until ready to serve.
