Blueberry Bagel Bread Pudding

This bread pudding gives the classic comfort food a fun twist by using blueberry bagels and folding in fresh blueberries.

Blueberry Bagel Bread Pudding

The custard-soaked bagels soften into a sweet, fruity bread pudding flecked with bursts of fruit. Top with whipped cream or vanilla ice cream.

Ingredients

  • 3 tbsp unsalted butter
  • 2 cups heavy cream
  • 1 cup + 1 1/2 tbsp granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 6 cups cubed blueberry bagels
  • 1 1/4 cups blueberries

Directions

  • Preheat oven to 350 degrees F. Butter bottom and sides of an 8x8-inch baking dish.
  • Melt butter in a small saucepan over medium heat; whisk in cream and 1 cup sugar, and bring mixture to a simmer. Remove pan from heat.
  • In a large mixing bowl, whisk eggs and vanilla until well combined - about 1 minute. Gradually whisk in hot cream until well combined. Stir in chopped blueberry bagels and allow mixture to sit for 10 minutes.
  • Evenly pour bagel mixture into prepared dish, and top with blueberries; sprinkle top with additional 1 1/2 tablespoons sugar. Bake 40-45 minutes or until golden brown, bubbly, and set. Cool on a wire rack until ready to serve.
